“The wines entitled to the Anjou Rouge appellation generally come from parcels located at the foot of the hills, on a clay-schistose soil of the south shore of the loire. Two main grape varieties make up the Anjou Rouge : the Cabernet Franc, called
in the Loire Valley “”Le Breton”” and Cabernet Sauvignon. The first gives the wine its finesse and the second, harvested on stony and warm soils, gives it a framework that predisposes it to age. The grapes are harvested mechanically at full maturity or slightly over-maturation. The aging is conducted by racking or bubbling in a cement tank to refine the tannins and develop the fruit and the delicacy of the wine.”
